  • 3 sheets or plates of gelatin (mango or unflavored).

    Preparation

    1. Crush the cookies with a mortar or food processor and mix with the butter at room temperature or melted. When you have a sandy dough, put it in the mold that you will later use for the cake, as it will be the base. Press well with your fingers. You can cook in the oven if you want (about 5 minutes), or put it in the fridge for 20 minutes.
    2. Now, prepare the filling. To do this, heat half the cream over low heat, add the cheese and sugar and stir well. Pour in the diluted curd with the remaining cream. Stir until it boils and remove from heat.
    3. Take the mold from the fridge or oven and pour the previous mixture once it has warmed up.
    4. Put in the fridge for 3 hours.
    5. To prepare the topping, hydrate the gelatin sheets with the water, according to the manufacturer. Peel, chop and puree the mango. Heat it in a saucepan and mix with sugar and water. Add the gelatin sheets, stirring so that it is integrated and remove from the heat, allowing it to warm.

    For the base

    • 10 small muffins.
    • 1 cup of chopped walnuts.
    • 200 ml of orange juice.

    For the cream

    • 200 grams of cottage cheese.
    • 300 grams of Philadelphia type cheese.
    • 2 sachets of unflavored gelatin.
    • 7 tablespoons of sugar.
    • 100 ml of orange juice.

    • 50 ml of lemon juice.
    • 2 tablespoons of sugar
    • ½ sachet of unflavored gelatin.

    How do you prepare?

    1. Crumble the muffins in a bowl and mix with the chopped walnuts and orange juice until you get a thick paste (pour in the juice little by little). Cover the bottom of a removable mold with baking paper with this dough and place in the fridge.
    2. To make the cream, beat the Philadelphia cheese and the curd. Besides, whip the cream and add half the sugar. Heat the orange juice and dissolve the gelatin (complete with water if necessary). Pour into the cheese mixture and stir. Then add everything to the cream and beat to obtain a homogeneous cream. Pour over the base and return to the fridge for about 3 hours.
