American Apple Pie

Apple pie, better known as American apple pie , is one of the most representative desserts in the United States. And the best thing is that you no longer have to travel there to try it.

This exquisite dessert tastes very good if we accompany it with a scoop of vanilla ice cream, or when we add cinnamon or caramel. However, we leave this to your preference.

For the outer dough (broken dough)

  • 1 sachet of yeast (12 g).
  • 1 teaspoon of salt (5 g).
  • 3 cups of loose flour (375 g).
  • 1 medium egg (60 g).
  • 1 tablespoon of sugar (10 g).
  • 7 tablespoons of butter (70 g).

To prepare the filling

  • 4 apples.
  • Butter (to taste)
  • The juice of half a lemon.
  • 6 tablespoons of sugar (60 g).
  • 1 tablespoon of ground cinnamon (10 g).
  • 1/2 tablespoon of nutmeg (5 g).

    Some considerations

    • Loose flour is used because it is the one with the least amount of gluten.
    • For the butter to integrate easily, before starting to make the recipe, it is necessary to place it out of the refrigerator.
    • By mixing the flour with the cold butter, we want it to trap as much of the gluten from the flour as possible, separating it from the wet ingredients. Gluten provides elasticity to doughs, which is precisely why we try to isolate it. 
    • For those who do not know how to make the grids: this is achieved by kneading the dough with the rolling pin and cutting a circle with the mold in which the dough is to be prepared. The circle is cut into lines with the help of a ruler and the mold is covered, making a braid (basket type) on the apple pie, after having added the filling.
