Ingredients

  • Pineapple and coconut liquid yogurt to drink (2 l)
  • 12 sheets of neutral gelatin

Preparation

  • First, we hydrate the gelatin sheets in water.
  • Next, we put the liquid yogurt in a pot and heat it.
  • Once hot, we remove it from the heat. Immediately after, we add the hydrated and drained gelatin to the yogurt. Then, we mix everything well until it dissolves.
  • Then we pour everything into a mold.
  • Then, let it cool in the fridge for at least 4 hours.
  • At the time of serving, we unmold the piña colada cake without an oven. Also, if we want, we can decorate it with melted chocolate threads or pineapple chunks.

    Ingredients

    For the base

    • Melted butter (100 g)
    • Cookies (180 g)
    • Sugar (20 g)

    For the cream

    • Classic Philadelphia cheese (480 g)
    • Coconut in pieces (100 g)
    • Pineapple chunks (100 g)
    • Icing sugar (120 g)
    • Sweet cream (100 g)
    • Fishtail gelatin (15 g)

    To cover

    • Pineapple juice (200 ml)
    • Coconut pulp (100 g)
    • Pineapple pulp (100 g)
    • Fishtail (15 g) (neutral gelatin)

    To decorate

    • Fresh cream (100 ml)
    • 1 slice of pineapple
    • grated coconut 

    Preparation

    Base

    • To prepare the piña colada cake without an oven, we start with the preparation of the base.
    • First, put the digestive cookies in a food processor and add the brown sugar. Next, chop finely.
    • Then add the room temperature softened butter and the crumbled cookies to a bowl. Then mix everything well.
    • Lastly, grease a cake pan. Then, pour the mixture and put everything in the freezer for ten minutes.

    Stuffed

    Pineapple chunks

    • First, peel and chop the pineapple and coconut. Then divide the mixed fruit pieces into two bowls of 200 g each. Thus, 200 g will be used for the cream and the remaining 200 g for the gelatin topping.
    • Then, proceed to the preparation of the cream. To do this, put the Philadelphia cheese in a bowl and beat with the mixer to make it creamy.
    • Then add the 200 g of tropical fruits in pieces. Then add the icing sugar and continue stirring the mixture with a spatula.
    • Then, hydrate 15 g of neutral gelatin in cold water for 10 minutes, drain well and let cool. Then, join the rest of the cream and mix well.
    • Almost to finish, stir to integrate the ingredients well and pour the mixture into the mold.
    • Next, leave the piña colada cake without an oven in the fridge for at least 4 hours.
    • After that time, prepare the coverage later.

    Coverage

    • To start, put 15 g of softened gelatin in cold water for 10 minutes. Then drain it well.
    • Next, put 100 g of pineapple and 100 g of coconut in the blender or blender glass until creamy. Then drain everything with a strainer.
    • Then, put the fruit mixture obtained in a pot and let it simmer for a couple of minutes. Finally, remove from the heat, add the squeezed gelatin and stir to melt.
    • Then pour the cold mixture into the base and store in the fridge for another hour to harden.
