Broccoli With Chicken And Rice

Broccoli is possibly one of the least favorite foods for people, especially children. We invite you to prepare this recipe for broccoli with chicken and rice.

The well-known reluctance to eat broccoli is part of a prejudice, since this is in fact a very nutritious vegetable and well prepared, it is delicious.

Broccoli with chicken and rice recipe

A good way to give a taste to those foods that you do not like, but want to give it a try, is to  mix them with things you like.

As long as the flavors are compatible it can be done.

So pay attention and you may be surprised by the results.

Ingredients

  • 2 boneless chicken breasts
  • 2 cups vegetable soup
  • 2 cups of rice
  • 2 cups of broccoli cut
  • Vegetable oil
  • Salt and pepper

Preparation

It is important to keep in mind the time for preparing the rice and the appropriate time for the broccoli to be cooked.

Put the rice to cook in a pot. Remember that you must use a splash of oil, a pinch of salt and for each cup of rice add two of water. Normally after 10 minutes you should move it so that it does not stick, and let it dry.

While you wait for the rice to be ready, take the opportunity to cook the broccoli. We suggest you add it to the water when it is bubbling and always leave it with the lid on. The idea is that our broccoli is al dente (that is, it is soft on the outside but with a crispy center ). Depending on the flame you use it can take between 7 to 12 minutes.

Then, cut the chicken into small cubes or strips.In a frying pan, heat the oil over medium heat, when it is hot add the chicken and let it brown all over. Remove the chicken and in the same pot, add the broth, half a cup of water, the broccoli and the rice.

Stir everything very well and wait for the mixture to boil, take advantage of this moment to season the preparation.

Let the liquid reduce for a few minutes and when it is more or less dry, place the chicken, cover the pot and let it cook for five minutes. Time will give you the broccoli, it should be soft, but a little crispy.

Once that time has passed, remove the pot from the heat and let it cool for a minute.

You can put your preparation in a beautiful container for your guests to serve or do it directly on plates accompanied by a rich puree.

Additional tips

  • For the broth you can use the options you get in the supermarket. Or just make a soup with carrots, beans, and peas.
  • You can also add a piece of chicken.  We suggest you to save your ingredients that you prepare the broth with the skin and bones of the breast that you are going to use. Cook it until the water reduces a bit and you have a thick broth.
  • If you are a beginner with broccoli, we suggest using only the head, removing the stems. This way you can get familiar with the flavor without being distracted by the crunchy texture of the stem.
  • Keep in mind that when you want to reduce the liquid of a preparation you must cook the ingredients with the pot without a lid.
  • We recommend not adding salt, with the exception of the rice, until you stir them all. This is to avoid getting salty and ruining your recipe.
  • If you want to highlight the flavor of the chicken, we suggest you leave it marinating the night before in a mug with pepper and black beer. It will give you a flavor that will be hard to forget.
